Flavor of the Month: Kale Salad

The Forge Restaurant | Wine Bar was featured in Ocean Drive Magazine’s Flavor of the Month. Burn Notice star Gabrielle Anwar gives her take on healthy eating in Miami. She recommended The Forge Restaurant | Wine Bar for its Kale Salad. Kale is one of the healthiest super vegetables on the market. It is a fantastic source of fiber, antioxidants, calcium and vitamin C among other vitamins and minerals. It can be eaten cooked or raw and Dewey LoSasso of The Forge serves it in a finely chopped salad with sweet currents, pine nuts, lemon zest and a pinch of parmesan. Refined and delicious.

Things are changing in the food industry. People would like  to see natural locally grown or raised on their plates. They want to eat healthier to be healthier. They want to know where the food they are eating comes from. If you look in the more elegant supermarkets you will see more and more organic selections and more gluten free selections being made available to the client.  In Ocean Drive Magazine, Top Chef’s Gail Simmons talks about the new trends in cuisine.  The Forge’s top chef Dewey LoSasso states in the beginning of this article: “People want more health benefits out of what they eat, and pastas, especially, will get a makeover.”  I can’t wait to taste his new creations. Chef Dewey LoSasso Heads Bacardi Jury

Bacardi Global Travel Retail holds an important competition each year: Bacardi Bartender of the Year and Bacardi Chef of the Year to honor and celebrate the Bartender and Chef that have changed the landscape of the food service industry for cruise travelers. This year it is The Forge’s Chef Dewey LoSasso that is heading the Jury. They have narrowed down the 1850 entries to 5 Chefs and 5 Bartenders. On March 9th the winners will be announced. Invention is a very important aspect of this industry, whether it is a corner sandwich shop or a 5 star environment. The clientele today is always looking for new and better and as we develop as a civilization our knowledge and desire for new tastes shift and change.
