The Forge’s Take on Burgers

without comments

It is national burger appreciation month and Dewey LoSasso of The Forge has come up with a sensational answer to America’s favorite sandwich. His burger is 10 ounces of hormone free sirloin topped with short rib and lobster marmalade. OMG, I can’t wait to savor that combination! And the French Fries are tossed with truffle oil, how very Français!

Fusion

without comments

Fusion is the forming of a new taste by matching and mixing two or more different established tastes to create a totally new entity. This idea of fusion is a very important concept for a Chef, as fusing creates an entirely new outlook on the subject of cooking. This is what the Executive Chef of The Forge Restaurant | Wine Bar means when he states that he “prefers the term “American-Fusion” over American Cuisine, given the cultural influences of the various regions of the country. “It’s more about a community of food,” says Dewey. “We take cues from Creole, French, Cuban, Asian, and so on, to create amazing dishes.”" America is a melting pot of cultures and Chef Dewey LoSasso takes his inventive cues from the cuisines of these cultures and creates a menu of delicious mélanges at The Forge Restaurant | Wine Bar.

Miami’s Hot New Food Trends

without comments

Things are changing in the food industry. People would like  to see natural locally grown or raised on their plates. They want to eat healthier to be healthier. They want to know where the food they are eating comes from. If you look in the more elegant supermarkets you will see more and more organic selections and more gluten free selections being made available to the client.  In Ocean Drive Magazine, Top Chef’s Gail Simmons talks about the new trends in cuisine.  The Forge’s top chef Dewey LoSasso states in the beginning of this article: “People want more health benefits out of what they eat, and pastas, especially, will get a makeover.”  I can’t wait to taste his new creations. If anyone in Miami can contribute to the development of new tastes and trends it is definitely Dewey LoSasso of The Forge Restaurant | Wine Bar.
