Things are changing in the food industry. People would like  to see natural locally grown or raised on their plates. They want to eat healthier to be healthier. They want to know where the food they are eating comes from. If you look in the more elegant supermarkets you will see more and more organic selections and more gluten free selections being made available to the client.  In Ocean Drive Magazine, Top Chef’s Gail Simmons talks about the new trends in cuisine.  The Forge’s top chef Dewey LoSasso states in the beginning of this article: “People want more health benefits out of what they eat, and pastas, especially, will get a makeover.”  I can’t wait to taste his new creations.
